Episode #4: Let's Make Pitas

Not Martha continues her feature on flat breads with a super pita recipe from "The Bread Book" by Linda Collister and Anthony Blake. I can almost smell the bread...

2-1/4 tsp dry active yeast
1/2 tsp sugar
1-1/4 cup water
1 Tbls olive oil
2 cups bread flour
1-1/2 to 2 cups all purpose flour
1-1/4 tsp salt

This video was fabulous. Thank you! I tried making pita for the 1st time today and was disappointed with the results. Then I found you! I will be giving this a try post haste! Your pitas look wonderful to me. I think the key is the 15 minutes resting after making the balls and then another 30. I made the balls and immediatly formed the pitas (to thin I think) with my hands and let rest for 45 minutes. Not very puffed. Can't wait to try again.
